Ingredients: (serves 1)
1 cup red cabbage
1 medium carrot
½ cup raw broccoli
1 courgette/zucchini
1 can shredded tuna in brine
1 tsp mayonnaise
1 tsp plain natural yoghurt
1 tsp olive oil
Salt and pepper
Fresh herbs: spring onion, coriander
1 lime
Method:
1.Finely slice the red cabbage.
2.Peel and grate the carrot
3. Finley chop the broccoli and courgette
4.Strain the brine from the tuna and mix the meat with the mayo, olive oil and yoghurt
5.Season with salt, pepper and herbs and lemon
6. Spoon the tuna mix over the colourful veg and serve with a slice of lemon
