The Bees-Knees Dressing:

Blitz together ½ avocado
1 small garlic clove
2 Tbsp lemon juice
1 tsp lemon zest
1 tsp honey
1 tsp Dijon mustard
1 small handful each of basil, parsley, coriander & mint
¼ cup extra-virgin olive oil
¼ cup warm water
Salt and pepper to taste
Optional – ½ fresh green chilli, deseeded
