Stack of Love: Oat Crumpets

It’s Valentines Day this Sunday! Spoil your partner with these yummy Chocolate crumpets.

Ingredients:

Crumpets

1.5 cup oats (process into a flour) – Use gluten-free oats to make them into a gluten-free breakfast

1 cup unsweetened almond milk (any milk/milk alternative)

1 large ripe banana

1/4 tsp coconut oil

Optional add ins:

Cinnamon, Vanilla powder, Cacao nibs, Cacao powder, Almond butter, Blueberries.

Sauce

3 tsp honey

2 tsp cocoa powder

 

Directions:

Place oat flour, milk and banana in a food processor and blend together until liquid.

Place in any optional add-in ingredients.

Spoon a large tablespoon of batter into the pan, making round disk-shaped crumpets.

If you have a non-stick pan, keep it on low heat the entire time you cook your crumpets. If not, add in a small amount of coconut oil before adding the batter.

Chocolate Sauce:

Mix honey and cocoa powder together in a bowl until you get your desired consistency.

Tip:

Keep the oven warm while you are cooking. This way you can keep your crumpets warm while you bake all the crumpets.

Top with sauce and anything else your heart desires: cacao nibs, cinnamon, berries, flaked almonds etc.
