Blitz together 2 medium beetroot, cubed and roasted until tender, with 1 garlic clove
Add 1x can drained butter beans (or chickpeas)
2 Tbsp tahini
3 Tbsp extra-virgin olive oil
3 Tbsp warm water
1 Tbsp lemon juice
1 pinch salt
Adjust to taste, loosen with water or olive oil if needed
