Lockdown Crunchies

Makes 8 cruchies 

Ingredients:

Orange-infused

2 cups rolled oats

1 cup gluten-free flour  

½ cup coconut oil

1/3 cup raw honey 

3 tablespoons stevia/erythritol 

1 teaspoon bicarb of soda 

2 teaspoons cinnamon 

1 teaspoon vanilla essence 

½ cup desiccated coconut or coconut flakes 

Rind of 1 orange, grated 

Chocolate 

As above – replace orange rind with 1/3 cup raw cocoa powder 

*Add seeds or nuts if desired

Method:

  1. Preheat oven to 180 degrees Celsius.
  2. Add oats, sifted flour, bicard, cinnamon and coconut into a large bowl. 
  3. Grate orange rind and add to mixture. 
  4. Melt coconut oil and add. 
  5. Add honey, sweetener of choice and vanilla essence. Mix well. 
  6. Use butter to line your baking tray. Add all mixture into baking tray. 
  7. Bake for 20 minutes.
