Heart Healthy Bread

This one-bowl wonder of healthy seeds, nuts, fibre, olive oil and chia is a heart healthy life saver. Easy to make and perfect to snack on with your choice of topping.

Ingredients
½ cup Flax Seed
¾ cup Sesame seeds
¾ cup Sunflower seeds
¾ cup Pumpkin seeds
½ cup Walnuts gently smashed or nuts of choice
¼ cup Psyllium husk
2 Tbsp Olive oil
2 Tbsp Almond flour or coconut flour
2 tsp Sea salt
4 large Eggs
1 Tbsp Mixed dried herbs
¼ cup Water
2 Tbsp Chia seeds

Directions
1. Heat oven to 160 C and grease a loaf tin.
2. Mix all ingredients in a bowl and stir until evenly combined, wet and thick. Set aside at room temperature for 15-20 minutes to allow chia seeds, linseeds and psyllium husk to absorb the moisture and bind.
3. Pour mixture into loaf tin and spread evenly. Bake for 60 minutes. Remove the bread from the baking tin and leave to cool before slicing.
