Ingredients:
1 Tbs Olive oil
1 onion roughly chopped
2 cloves garlic
1 leek thinly sliced
2 courgettes roughly chopped
1 large head broccoli, stems removed
1 bulb fennel, trimmed and chopped into pieces
1.25 l vegetables stock
1 tsp ground coriander
1 tsp ground cumin
½ tsp chili flakes
Salt and pepper
½ bunch kale, stalks removed
100g baby spinach leaves
25g mixed herbs (coriander, mint, parsley), roughly chopped
Method
- Heat olive oil.
- Add onions, garlic, leeks and cook for 5 min
- Add courgettes, broccoli and fennel and cook for 3 minutes
- Pour in the stock, add the ground spices
- Bring to the boil then simmer for 10 min
- Add the kale and simmer for 5 min
- Add the spinach and simmer for 1 min
- Blend the soup until smooth
- Season with herbs, salt and pepper
Enjoy served with fresh coriander, hot or cold
