Green Detox Soup


1 Tbs Olive oil

1 onion roughly chopped

2 cloves garlic

1 leek thinly sliced

2 courgettes roughly chopped

1 large head broccoli, stems removed

1 bulb fennel, trimmed and chopped into pieces

1.25 l vegetables stock

1 tsp ground coriander

1 tsp ground cumin

½ tsp chili flakes

Salt and pepper

½ bunch kale, stalks removed

100g baby spinach leaves

25g mixed herbs (coriander, mint, parsley), roughly chopped


  1. Heat olive oil.
  2. Add onions, garlic, leeks and cook for 5 min
  3. Add courgettes, broccoli and fennel and cook for 3 minutes
  4. Pour in the stock, add the ground spices
  5. Bring to the boil then simmer for 10 min
  6. Add the kale and simmer for 5 min
  7. Add the spinach and simmer for 1 min
  8. Blend the soup until smooth
  9. Season with herbs, salt and pepper

Enjoy served with fresh coriander, hot or cold
