Christmas Spinach Salad

Serves 4


300g baby spinach 

2 avos, peeled a pitted

200g strawberries

100g chevin goat’s cheese

100g peanut brittle

Balsamic glaze, to taste


  1. Wash spinach leaves and place into a serving bowl or on a platter.
  2. Cut the avo into cubes and layer on the spinach.
  3. Hull ad halve the strawberries and place onto the avo. 
  4. Slice the goat’s cheese into thin discs and layer over strawberries.
  5. Crush the peanut brittle and sprinkle.
  6. Squirt balsamic glaze over the top. 
  7. Serve immediately.
